Cheesy Sweet Potato Pastry Bites — Crisp Outside, Soft Inside, the Cheese Pulls

Why You'll Love It
I won't accept that anyone hasn't tried these. Sweet potatoes right now are genuinely sweet — good steamed, good roasted — but turning them into cheesy sweet potato pastries is the real move.

The outside is crisp and shattery, the inside is sweet, soft, and sticky-sweet, and the cheese pulls with that milky richness. If you're a cheese person, this is it. The smell fills the house and the kids come running before they're even out.

It's almost ridiculously easy — you really can't mess this one up. No kneading; the frozen flatbread does the work, so a total beginner nails it first time. If you have sweet potatoes at home, try it. If they're not good, come find me.

Ingredients
| Ingredients | |
|---|---|
| 10½ oz (300 g) sweet potato | 2 frozen flatbreads (hand-pulled style) |
| ¾ cup (80 g) shredded mozzarella | 1½ tbsp (20 g) sugar or condensed milk |
| 1 egg yolk, beaten | black sesame seeds, for topping |
Ingredient Notes
- Pick a sweet variety with few fibers — the sweeter the potato, the better these are.
- Work with the flatbread when it's just softened but still a little firm. Fully thawed, it sticks to the board.
- Shredded mozzarella gives the best pull — don't use cheese slices.
- Brush on a thin layer of egg yolk; too much and it scorches black.
- Slit the tops twice to let steam out, so they don't burst while baking.
Instructions
-
1
Peel and cube the sweet potato and steam until a chopstick goes through easily.
Mash it smooth while hot and stir in the sugar or condensed milk.
-
2
Take the flatbread out of the freezer and leave it a minute or two — you want it pliable but still slightly firm.
Lay it on the board and spread an even layer of sweet potato over it, leaving a border uncovered.
-
3
Put a line of mozzarella down the middle of the sweet potato. Add more if you want a longer pull.

-
4
Roll it up from one side, fairly tight, and pinch the seam closed. Freeze the log for 20–30 minutes.

-
5
Once it's firmed up, take it out and cut into pieces about ¾ in (2 cm) thick.

-
6
Line the air fryer with parchment, add the pieces, brush the tops with beaten yolk and sprinkle with sesame seeds, then air-fry at 350°F (180°C) for 12 minutes — or bake at 400°F (200°C) for 20 minutes.
Every air fryer runs differently, so pull the basket out around the 10-minute mark: golden and crisp on top means they're done. In an oven, flip them halfway so they brown evenly.
-
7
The smell fills the kitchen before they're even out. Crisp outside, soft inside, cheese pulling in long strands — so satisfying. And sweet potatoes are in season: cheap and sweet, so a whole batch costs almost nothing compared to buying them.

-
8
If you have sweet potatoes at home, you have to try these. Best eaten hot, when the cheese pulls in long strings. Really, really good.

Cheesy Sweet Potato Pastry Bites
frozen flatbread wrapped around sweet mashed sweet potato and mozzarella, air-fried until crisp outside and soft inside with a long cheese pull.
Time Needed
Prep Ahead
- Steam and mash the sweet potato until smooth — once cooled it spreads much more easily.
- Freeze the rolled log 20–30 minutes before cutting, or the slices won't hold their shape.
- 【Yield】10½ oz (300 g) sweet potato plus 2 flatbreads, cut into ¾ in (2 cm) pieces — about 12 bites.
- 【Key ratios】Sweet potato to cheese ≈ 300:80; adjust the 1½ tbsp (20 g) sugar or condensed milk to how sweet your potato is.
- 【Heat】Air fry at 350°F (180°C) for 12 minutes, or bake at 400°F (200°C) for 20 minutes. Check around the 10-minute mark.
- 【Chilling】Freeze the rolled log 20–30 minutes before cutting, so the slices are clean and the filling doesn't run.
- 【Storage & reheating】Freeze the unbaked pieces up to 2 weeks and bake straight from frozen (add 3 minutes); cooked ones keep 2 days in the fridge.
- 【Common problems】Bursting means it was rolled loosely or over-stuffed with cheese. Not crisp means the flatbread thawed too much and went soft.
