Unreasonably fragrant! A whole tray for about three dollars! No deep-frying, and the butter is incredible

Why You'll Love It

How do you usually eat pumpkin? Steamed? In congee? It's always the same few things. Today, something different — butter-roasted pumpkin!

Recipe photo

I didn't expect a 50-cent piece of pumpkin roasted with a little butter and honey to be this good. The outside is crisp and caramelized, the inside dense and creamy; one bite gives you butter and milk mixed with salty sesame. Sweet and clean, neither dry nor greasy.

This is perfect as a snack! Better than kabocha. I ate a whole tray in one go and couldn't stop, and it's ridiculously easy. Go try it!

Ingredients

Ingredients
1 piece mature pumpkin (about 1 lb 2 oz / 500 g)2 tbsp cornstarch
butter, as needed2 tbsp honey
1 tbsp sesame salta pinch of black pepper

Ingredient Notes

  • Use mature pumpkin like kabocha or honey varieties — less water, more starch. Not young pumpkin.
  • The cornstarch is what forms the crust. Don't skip it.
  • Butter is the soul of this dish; vegetable oil is a big step down in flavor.
  • Sesame salt already carries salt, so no extra salt needed.
  • Cut the pieces the same size so they cook evenly.

Instructions

  1. 1

Peel the pumpkin and cut it into small pieces, about thumb-sized.

    Step 1 photo
  2. 2

Put the pieces in a bowl with 2 tbsp cornstarch, 1 tbsp sesame salt, a pinch of black pepper, and 2 tbsp honey.

    Step 2 photo
  3. 3

Toss it by hand until every piece is coated.

    Step 3 photo
  4. 4

Melt the butter in the microwave, pour it over the pumpkin, and mix so every piece is coated. The butter is the soul of this — don't skip it.

    Step 4 photo
  5. 5

Line the air fryer with parchment, arrange the pumpkin in a single layer, and air-fry at 400°F (200°C) for 10 minutes.

    Step 5 photo
  6. 6

Flip them and go another 10 minutes. (Or bake at 400°F / 200°C for 30 minutes.)

    Step 6 photo
  7. 7

Straight out of the fryer they're steaming hot, the outside crisp and golden — they look good enough to eat on sight.
One bite and the outside is caramelized while the inside is dense and creamy. A hundred times better than steamed. Great as a snack or alongside rice.

    A few notes:
    - Butter is the soul of this — don't skip it.
    - Flip them halfway so they cook evenly.
    - Cut every piece the same size, so they finish at the same time.

  1. 【Yield】About 1 lb 2 oz (500 g) pumpkin, cut thumb-sized, fills one basket.
  2. 【Key ratios】2 tbsp cornstarch + 2 tbsp honey + 1 tbsp sesame salt + a pinch of pepper + melted butter to coat.
  3. 【Heat】Air fry at 400°F (200°C) for 20 minutes total, flipping halfway; oven 400°F (200°C) for about 30 minutes.
  4. 【Coating】Toss the dry seasonings first, then pour over the melted butter and mix until every piece is coated.
  5. 【Storage & reheating】Refrigerate 2 days; 5 minutes back in the fryer brings the crisp back.
  6. 【Common problems】Not crisp means too little starch or too wet a pumpkin. Burnt means the pieces were too small or you didn't flip them.
