All that chew, and one skillet does the whole thing. Delicious, low in fat, and filling

Why You'll Love It
Double bliss for anyone who loves chewy things and taro. A heavenly dessert you can make in one skillet: taro mochi dorayaki, with sweet, soft taro paste wrapped around mochi that pulls into strands, sandwiched in freshly fried pancakes. Every bite is pure happiness 😋

My kid finished one and chased me for more, and it's simple — stir, fry, done. A beginner can't fail it.

Ingredients
| Taro Paste | |
|---|---|
| 9 oz (250 g) taro | 1 tsp (3 g) purple sweet potato powder |
| 2½ tsp (10 g) sugar | a splash of milk, for blending |
| Mochi | |
|---|---|
| ⅔ cup (80 g) glutinous rice flour | 2½ tbsp (20 g) cornstarch |
| ½ cup + 3 tsp (140 ml) milk | 1¼ tbsp (15 g) sugar |
| 2 tsp (10 g) butter | |
| Pancakes | |
|---|---|
| 2 eggs | ¼ cup + 1 tsp (65 ml) milk |
| ¾ cup + 2 tsp (100 g) pancake mix | ¾ tsp (3 g) baking powder |
Ingredient Notes
- Lipu taro is starchy, sweet, and fragrant — the one to use.
- The purple sweet potato powder is only for color; leave it out if you like.
- Pancake mix already contains sugar and leavening — don't substitute bread flour.
- Keep the mochi covered, or it forms a skin.
- Rest the pancake batter 10 minutes before frying for more even bubbles.
Instructions
-
1
Peel and thinly slice the taro and steam it over medium heat for 20–25 minutes from boiling, until a chopstick goes through easily. Put the hot taro in a blender with the purple sweet potato powder, sugar, and a splash of milk, and blitz to a paste.

-
2
Put the glutinous rice flour, cornstarch, and sugar in a large bowl and add the milk gradually, whisking as you go, until there are no dry lumps. Strain once for a finer texture. Cover the bowl with plastic wrap, poke a few holes with a toothpick, and set it in the steamer.

-
3
Steam over medium heat 20 minutes from boiling. Take it out, add the butter immediately, and fold with a spatula until melted. Then put on disposable gloves and stretch and fold it for 2–3 minutes — stretching makes it springier and keeps it soft when cool. Cover and set aside.

-
4
Put everything for the pancakes in a bowl and stir until smooth.

-
5
Preheat a skillet over low heat; no oil needed. Spoon in a ladle of batter and let it spread into a 2–2½ in (5–6 cm) round. When small bubbles appear on the surface, flip and cook 30 seconds more, until both sides are light golden. Cook them all.

-
6
Take a cooled pancake, smooth side down, and spread an even layer of taro paste in the middle.

-
7
Divide the mochi into portions, lay one on top, and cap with another pancake. Taro mochi sandwich done!

-
8
One bite: soft pancake, sweet taro, stretchy mochi — three textures colliding. No taro lover or chewy-texture fan can resist. Grab the skillet and give yourself sandwich freedom.

Taro Mochi Pancake Sandwiches
Taro mochi pancake sandwiches: steamed taro paste and stretchy mochi sandwiched between skillet pancakes. Three textures, one pan.
Time Needed
Prep Ahead
- Slice the taro thin so it steams through quickly.
- Cover the finished mochi so it doesn't dry out; the pancakes can be fried ahead and cooled, which makes assembly faster.
- 【Yield】Makes 6–8 sandwiches.
- 【Key ratios】Mochi: glutinous rice flour to cornstarch = 4:1 (80:20) with ½ cup + 3 tsp (140 ml) milk. Pancakes: ¾ cup + 2 tsp (100 g) mix + 2 eggs + ¼ cup + 1 tsp (65 ml) milk.
- 【Heat】Skillet over low heat, no oil; flip when bubbles appear and cook 30 seconds more. Steam the taro over medium 20–25 minutes from boiling.
- 【Stretching】Add butter to the mochi while hot and stretch 2–3 minutes with gloves on — it stays soft even when cool.
- 【Storage & reheating】Refrigerate 2 days; the mochi firms up. Reheat in a skillet or 15 seconds in the microwave.
- 【Common problems】Pancakes browning too dark means too high a heat. Hard mochi means it wasn't stretched or was chilled too long.
