American Kolache, a new bakery located on Bardstown Road near the Highlands Kroger, is introducing locals to a unique eastern European pastry known as kolache.Kolache is a sweet, yeast-filled dough with different fillings. The concept originated in the Czech Republic and was later Americanized in Texas, where meat and various other ingredients were added. Today, American Kolache offers dozens of menu options, including sausage gravy, bacon, egg and cheese, cheese rangoon, and even s'mores. "We have about 30 different ones," owner Bryan Barrett said. "Six or seven sweet, and the rest are savory or breakfast."The idea for the shop came after owner Bryan Barrett tried a kolache for the first time and realized he could not find kolaches anywhere in Louisville. He then started researching where else he could find one and stumbled upon the American Kolache franchise. "I thought he was crazy. I was about to retire in a few years from teaching," Denine Barrett said. "So, just to appease him, I went. They tasted delicious, and the process was pretty simple. So, here we are, three years later."Last year, Denine Barrett retired after 32 years of teaching, and earlier this month, she and her husband started their new adventure, American Kolache. "I'm definitely getting up a lot earlier now than when I did when I was teaching," Denine Barrett said. Since the two are still getting their footing, they are both running all of the operations at the bakery and starting their days way before the doors open for business. Everything they do there is made in-house, from the dough to the filling. "They're all proportioned evenly. All 2.5 ounces," Barrett said. The restaurant operates as a grab-and-go establishment, allowing customers to pull up, park in front and quickly pick up their orders. "Just come in and get what you want. Pull right up. We have parking right in the front, and give us a try," Barrett said.American Kolache is located at 2603 Bardstown Road. It is open from 6 a.m. to 2 p.m. Monday through Saturday, and 7 a.m. to 2 p.m. on Sundays.
