Chestnut-Shaped Buns — A Breakfast I Could Eat Every Day

Why You'll Love It
Today I'm making buns that look startlingly like real chestnuts. The outer layer blends a hint of cocoa bitterness with the sweetness of pumpkin, wrapped around a dense, sweet chestnut filling, and the round shape copies an actual chestnut. Every bite is a perfect collision of toasted and sweet — the best-looking and best-tasting thing on the table.

Ingredients
| Dough | |
|---|---|
| 1⅓ cups (160 g) all-purpose flour | ⅓ cup (80 g) cooked pumpkin purée |
| ¼ tsp (1 g) instant yeast | unsweetened cocoa powder, to taste |
| Filling (makes 4) | |
|---|---|
| 4¼ oz (120 g) cooked chestnuts | 1 tsp (5 g) butter |
| 1½ tbsp (25 ml) warm milk | |
Ingredient Notes
- Ready-cooked chestnut kernels are the easy route. If you boil your own, cook them until they crush between your fingers.
- Pass the chestnut purée through a sieve for a smooth texture — add milk if it's dry, milk powder if it's wet.
- Use unsweetened cocoa; it's only there for color and a faint bitter note at the end.
- Pumpkin purée varies a lot in water content, so hold back 2 tbsp (10 g) of flour to adjust.
- Brush a little water on the bottom before sticking on the sesame seeds, and they won't fall off after steaming.
Instructions
-
1
Put the steamed chestnuts in a blender with the softened butter and warm milk, and blend to a fine purée.
Sieve the purée, divide it into 4 portions of about 1¼ oz (35 g), roll each into a ball, and chill to firm up.
-
2
Put the flour in a bowl, mash the steamed pumpkin into it, add the yeast and knead into a dough. Take 3½ oz (100 g) of that dough and knead cocoa powder into it until even.

-
3
Divide the pumpkin dough into pieces of 1¼ oz (35 g), roll each thin, and wrap around a ball of chestnut filling.

-
4
Close it up slowly using the thumb-and-index pinch, then roll it into a smooth ball.

-
5
Divide the cocoa dough into pieces of 1 oz (26 g), roll each thin, and wrap it around the pumpkin ball.

-
6
Shape it into a chestnut: pinch a little point at the top, then press a lid into it to make the groove marks.

-
7
Brush the bottom with water, press on some white sesame seeds, and cut a small slit.

-
8
Set the buns in the steamer about 1¼ in (3 cm) apart, fill the pot with warm water (about 104°F / 40°C), close the lid and let them rise to 1½ times, roughly 20–30 minutes.
When they're ready, bring it to a boil over high heat, drop to medium and steam 15 minutes. Turn off the heat and rest 3 minutes before opening.
-
9
Steamed, they're round and plump with natural chestnut-colored markings. Bite in and pumpkin, cocoa, and chestnut all come together — dense yet soft, and honestly too cute to eat. 😋

Recipe Notes

Chestnut-Shaped Buns
Buns shaped to look exactly like real chestnuts: cocoa's slight bitterness against the sweetness of pumpkin, wrapped around a dense, sweet chestnut filling. Round and plump, just like the real thing.
Time Needed
Prep Ahead
- Steam the chestnuts ahead, blend them with softened butter and warm milk, then sieve. Portion into balls of about 1¼ oz (35 g) and chill until firm.
- Steam and mash the pumpkin ahead too, and let it cool to just warm before using.
- 【Yield】1⅓ cups (160 g) flour plus ⅓ cup (80 g) pumpkin purée makes 4 buns — 1¼ oz (35 g) outer layer, 1 oz (26 g) cocoa layer, and 1¼ oz (35 g) filling each.
- 【Key ratios】Flour to pumpkin purée ≈ 160:80, with ¼ tsp (1 g) yeast. Filling: 4¼ oz (120 g) cooked chestnuts + 1 tsp (5 g) butter + 1½ tbsp (25 ml) milk.
- 【Heat】Rise over warm water (about 104°F / 40°C) for 20–30 minutes, then bring to a boil over high heat and steam on medium 15 minutes. Rest 3 minutes before opening.
- 【Rising】Go up to 1½ times and steam as soon as a light press springs back. Over-proof and the markings disappear.
- 【Storage & reheating】Freeze up to 2 weeks, re-steam 8 minutes.
- 【Common problems】Markings disappearing means over-proofed. Cracking comes from a cocoa layer that's too dry or a seam that wasn't pinched shut.
