Cheese, Pork Floss & Ham Twist Rolls — Better Than Bread

Better than bread — savory, soft, and we eat them five times a week

Why You'll Love It

I worked out a home-style twist roll today that beats bread, and there's nothing complicated about it — one rise and you're done!
Savory pork floss, creamy mayonnaise, stretchy cheese, and little crisp-tender bits of ham. Unreal together.

Recipe photo

Every bite is full of filling, soft and squishy without being dry. My kid ate them three days running without getting tired of them, and the whole family keeps asking for more. Easy enough for a beginner to nail.

Recipe photo

Savory and well-seasoned with a milky cheese note — good-looking and good-eating. Warm one up after it cools and it's fluffy again. Works for breakfast, a snack, or even a soft finger food for little ones.

Ingredients

Dough
1¾ cups + 2 tbsp (220 g) all-purpose flour½ cup (120 ml) water
½ tsp (1.5 g) instant yeast
Filling
pork floss, as neededmayonnaise, as needed
diced ham, as neededcheese slices, as needed

Ingredient Notes

  • Use mozzarella or a processed cheese slice — it holds up to steaming and actually stretches.
  • Pork floss and mayonnaise are both salty already, so you can basically skip the salt.
  • Dice the ham rather than slicing it; small pieces spread more evenly.
  • Roll the sheet to about 8 × 12 in (20 × 30 cm) and roughly ⅛ in (3 mm) thick — any thicker and it won't roll up.
  • One rise is enough. Over-proof and the twist pattern blurs into one blob.

Instructions

  1. 1

Stir the yeast into the water until fully dissolved, then pour it slowly into the flour and stir with chopsticks until there's no dry flour left. Knead into a rough dough, cover, and rest 10 minutes to relax it. Then knead another 5–8 minutes until smooth and no longer sticky.

  2. 2

Put the smooth dough on the board and roll it into a rectangle about 8 × 12 in (20 × 30 cm). Brush an even layer of mayonnaise over the surface.

    Step 2 photo
  3. 3

Scatter pork floss and diced ham over one half of the sheet and press lightly so the filling sticks.

    Step 3 photo
  4. 4

Fold the sheet in half and press the edges firmly together so it doesn't open while steaming.

    Step 4 photo
  5. 5

Cut it into strips with a knife.

    Step 5 photo
  6. 6

Hold both ends of a strip and twist them gently in opposite directions into a rope.

    Step 6 photo
  7. 7

Starting from one end, coil the rope up, tuck both ends underneath, and shape it into a round roll. Do the rest the same way.
Line the steamer with parchment and space the rolls out so they aren't touching.

    Step 7 photo
  8. 8

Cover and let them rise somewhere warm until 1½ times bigger, then lay a small piece of cheese on top of each. Fill the pot with plenty of water, bring it to a boil over high heat, put the tray in, drop to medium and steam 12 minutes. Turn off the heat and rest 3 minutes.

    Step 8 photo
  9. 9

Straight out of the steamer they smell amazing: the soft dough has soaked up the creamy mayonnaise, and one bite gives you stretchy cheese wrapped around savory pork floss and tender ham. The layers are almost unfair.

Cheese, Pork Floss & Ham Twist Rolls

Cheese, pork floss and ham twist rolls: one rise and they work. Melty cheese wrapped around savory pork floss and tender ham, soft and never dry — better than bread.

Time Needed

Prepabout 25 minutes
First restabout 10 minutes
Extra kneadingabout 5–8 minutes
Steamingabout 12 minutes (plus 3 minutes resting)
Totalabout 1 hour 20 minutes

Prep Ahead

  • Nothing to prep — just take out the ham, cheese, and pork floss when you start.
  1. 【Yield】1¾ cups + 2 tbsp (220 g) flour makes 6–8 rolls; add pork floss, ham and cheese to taste.
  2. 【Key ratios】Flour to water ≈ 220:120, with ½ tsp (1.5 g) yeast. With a single rise, a little less yeast is steadier.
  3. 【Heat】Steam over boiling water on medium for 12 minutes, then rest 3 minutes before opening.
  4. 【Rising】Rest the dough 10 minutes, then knead 5–8 minutes until smooth. After shaping, rise to 1½ times.
  5. 【Storage & reheating】Refrigerate 2 days, freeze 2 weeks; re-steam 8 minutes.
  6. 【Common problems】Cheese that won't stretch was usually added too early or over-steamed — put it on after the rise. If the twist comes apart, the folded edge wasn't pressed firmly enough.
